Remember what it was like when smoked meats were hard to find in this city? It barely seems believable that there was a time – and it was not all that long ago, either – when barbeque food meant charred Bird’s Eye burgers and blackened bangers in the rain. Now, the US barbeque boom means we live in a world where pulled pork tops every sandwich. Beef brisket abounds. There is a smokehouse on every corner.

This is all, quite comprehensively, a good thing. I mean, my waistline is under more strain than Anglo-US relations, and my domestic special relationship is going to need crisis talks if I cannot curb my current level of spending on burnt ends. But in the hazy moments that follow a proper gorging session – before the meat sweats and the anxiety kick in - little of that seems to matter. Even less so when the food is paired with a few of BrewDog’s celebrated ales, as they were when we checked out the firm’s newest bar, The DogHouse, last week.

A self-styled “post-punk, apocalyptic, m**********r of a craft brewery,” the Scots company has established itself as fastest-growing bar and restaurant operator in Britain. It’s easy to see why: DogHouse is a stylish, modern space, and its beer and food selection is marvelously on-trend. The enormous floor-to-ceiling windows allow drinkers to watch the Merchant City go by, and the bare brick walls, exposed pipes, neon light and metal caging ooze sophisticated cool. The meats are sumptuous, the beer refined; the music is on point and the crowd is hip. This is a DogHouse you’ll end up going out of your way to get sent to again, and again, and again.
