Sweetheart Tablet Cheesecake by Ann James at Craft & Harbour, Ayr
This modern fish & chip restaurant in Ayr has created a beautiful Sweetheart Tablet Cheesecake with food lovers in mind for Valentine's Day.
The cheesecake is homemade by Ann James, one half of the new management team at the restaurant, along with her her husband Tony.
Ingredients: Serves 8-10
For the Base:
150 grams butter (melted)
1 large packet of digestive biscuits
1 x 26cm adaptable spring cake tin
For the cake:
800ml double cream
400 grams full fat cream cheese
400 grams Scottish tablet (chopped)
1 Tspn vanilla essence
1 strawberry for decoration
Method:
1) Place the biscuits into a food processor bowl and mix into a rough breadcrumb mixture.
Add the melted butter and mix together.
2) Place the biscuits base mixture into the bottom of the cake tin and press down evenly.
3) Put into a large mixing bowl the cream cheese, vanilla essence and cream and mix until a thick consistency. Do not over mix or it will be too thick. Gently blend in half of the chopped tablet.
4) Place cake mixture on top of the biscuit base. Use the remainder of the tablet to decorate the top of the cake. Slice the strawberry into segments and pop onto the centre of the cake.
5) Place into a fridge for at least three hours to set.
6) Serve.
