IBROX is set to be injected with a burst of colour as one of Scotland’s best bloggers sets up shop.

Sheri Scott, otherwise known as Betty, is the proud of owner of Copland Road’s newest roll shop - Good Times Roll.

The blogger and PR guru snapped up the disused space after moving to Ibrox from the West End and promises to bring the best breakfast rolls in the sassiest of surroundings.

Sheri and partner Steven Eddie are hard at work transforming the shop into ‘the most extra roll and coffee shop you’ve ever seen’ ahead of their opening in mid-March.

Good Times Roll will be an ‘Instagrammable’ space which vows not to charge customers through the roof to enjoy their surroundings.

Sheri and Steven follow in the footsteps of other Glasgow blogger Kate La Vie and husband Jordan, who recently opened their own coffee shop Market on Cathcart Road.

Sheri said: “After moving to Ibrox from the West End, I couldn't really believe the lack of quality places to jump in for a coffee or a roll.

“It was an area that I was pretty unfamiliar with until I moved, but after wandering around and finding deep fried frozen square sausage, and even the attempted redemption of coffee mate, I knew there was room for something more.

“I've always been somewhat of an advocate of sandwiches (if there is such a thing) and threatened to open one someday - thinking it was nothing but a pipe dream.

“I noticed a takeaway shutting up shop on Copland Road and thought it was the perfect location for what I wanted.

“With being just along the road from the subway, around the corner from the main bus route of Paisley Road West as well as walking distance to Bellahouston Park, schools and of course, Ibrox Stadium, it was the perfect location for both locals and the rest to come and enjoy.

“I'm not a football fan so had never actually been to Ibrox before moving here and fell in love with the community vibes.

“Hopefully, Good Times Roll will help people see that Ibrox doesn't deserve the rep it once had.”

As well as being an advocate for sandwiches, Sheri is also an advocate for Mortons rolls and will be proudly selling them in the shop.

She adds: “I feel like cafe is a stretch, maybe more the most extra roll and coffee shop you've ever seen.

“We will specialise in all day breakfast rolls and sandwiches.

“I am a huge fan of the humble Mortons roll and believe it's the most underrated of all the baked goods.

“We'll have home made tattie scones, hash browns, thick cut square and even Rose and Grant's legendary vegan square sausage as their first external supplier.

“I'm a huge fan of traditional done well, so am excited to bring in some unique specials as well as adding to institutions like a pie and Bovril deal on match days.

“We'll be the only place near us serving locally roasted coffee Dear Green so I'm excited to not only start this new venture, but also have some great produce on my doorstep too.”

Good Times Roll will be a ‘family’ business with Steven managing full time, close friend Laura of Brew Box fame taking over the kitchen and one of Sheri’s oldest friends Iona helping part-time.

With it being dog friendly, expect a few visits from the couple’s frenchies Olive and Daphne too.

“We want to be open for mid March, but there's a lot of work to do.
