Welsh Rarebit
Turn cheese on toast into something special with Chef Neil Forbes recipe for this classic dish and use up those common kitchen leftovers.

Ingredients:
1 slice of stale bread per person
50g plain flour
50g butter
250ml whole milk
250ml beer or more milk
cheese, grated or crumbled
1tsp of mustard
salad leaf
1 egg yolk (optional)
salt and pepper (optional)
Worcester sauce or tabasco (optional)
Method:
1.Using a pot on a low heat, mix butter and flower together for
a couple of minutes using a wooden spoon or whisk.
2. Slowly, add 250ml of milk. Then, add 250ml of additional
milk (or swap for beer).
Heat on medium until the mixture starts to thicken.
3. Add the mustard and crumbled cheese and whisk until a thick, sauce consistency is achieved. Add a splash of Worcester sauce or tabasco, if you would like some extra kick.
4. Beat in the egg yolk, then allow this mix to cool slightl
y. Meanwhile, toast the bread on both sides. Be sure not to burn it.
5. Using a knife, spread the cheese and mustard mix over the to ast on one side, then grill on a baking tray until golden brown. Serve with salad.
