Haggis Pakora

Ingredients
100gms Haggis
50gms Gram Flour
½ tsp Salt
1 tsp Cumin Seeds
½ tsp Red Chilli Powder
Pinch Fresh Coriander
Pinch Methi (fenugreek)
1 tbsp Ginger Garlic Paste
2 tbs Lemon Juice
5-6 tbsp Water
170◦ Oil for deep frying
Method
Place the haggis in a bowl and mash well with a fork, roll the mixture into 6 even sized balls. Place the gram flour in a separate bowl, add in the salt, cumin seeds, chilli powder, coriander, methi, ginger and garlic paste and the lemon juice. Add the water and mix all ingredients to form a batter.

150gms Haggis
50gms Flour
1 Egg
50gms Breadcrumbs
1 (small) Celariac
25gms Grain Mustard
50gms Mayonnaise
100ml Beef Stock
25ml Whisky
100ml Double Cream
Pinch Salt & Pepper
Method
For remoulade remove skin & slice into matchsticks, mix mustard & mayo, season & set aside. In a pan pour whisky, bring to simmer & add stock, reduce by half then add cream & simmer until thick. Shape the haggis into 3 identical balls roll in flour, then in beaten egg, then breadcrumbs & repeat again. Place in deep fat fryer at 180 degrees until golden. Arrange 3 nests with remoulade, place a bonbon in each, garnish with sauce and dressed salad.

15g of peppercorn sauce
15g of mayo
Beef mix (salt, pepper, mustard powder, Worchester sauce, white onion, garlic puree, parsley) Fresh lettuce

Preparation
We carefully press a burger patty and stuff it with 60grams of our handmade haggis. Then we put in on the grill for 8 minutes and after place it on our sough dough bun topped with peppercorn sauce, lettuce and mayo underneath it.
