25g Butter or vegetable oil

1 Onion, finely diced

1 Stick celery, finely chopped

2 Garlic cloves, crushed

250g Paella rice

500ml Fish stock

Few strands of saffron

8 Cherry tomatoes

200g Mussels

200g White fish

100g Clams

200g King prawns

1 Squid, cut into rings

50g Chorizo

Method

1. Sweat the onion, garlic, celery and

tomatoes in oil or butter in a large frying pan.

2. Add the rice and coat in the mixture.

3. Slowly add the hot stock and saffron

and simmer.

4. Once all the stock has been added place the mussels, fish, clams, prawns, squid and chorizo slices into the rice.

5. Cover with a lid and simmer for 4-5

minutes until the mussels are open and

serve.
