500g Sirloin of beef

100ml Hoi sin sauce

50ml Dark soy sauce

25ml Fish sauce

2 Cloves of garlic

25g Fresh root ginger

25ml Sesame oil

½ Red chilli

250g Rocket or Mizuna salad leaves

1 Red pepper sliced

1 Yellow pepper sliced

1 Carrot cut into thin strips

50g Bean sprouts

1 Mango, diced

25g Dry roasted peanuts

25ml Sesame Oil

Method

1. Mix hoi sin, soy sauce, fish sauce, garlic, ginger, sesame oil and half chilli in a food processor to make marinade.

2. Cut beef into thin strips and marinade for four hours.

3. Mix leaves with carrot strips, sliced peppers, bean sprouts, diced mango and peanuts.

4. Dress with a small amount of

sesame oil.

5. Remove beef from marinade and quickly flash fry in remainder or

sesame oil until cooked to preference.

Arrange beef on top of salad and serve.
