A favourite with Parkhead fans, Joe failed to recover at the city's Royal Infirmary after suffering a suspected stroke at his Glasgow home at the weekend.
Lisbon Lion Tommy Gemmell said: "This has come as a terrible shock. Joe was a great lad and we had some great moments together.
"He was a real Celtic great who could so easily have been a player in the team that won the European Cup in 1967."
Joe made history by becoming manager Jock Stein's first signing for the club, when he was bought from Motherwell for £25,000 in April 1965.
He played 94 times for Celtic and scored an amazing 86 goals.
He won two full Scotland caps and represented his country four times at Scottish League level.
His son, also named Joe, played for both Everton and Hibs.
