ANYONE who remembers their first day in their first job will recognise the importance of getting as much experience as possible before it is for real.
Brian Maule's project taking on pupils from Glasgow schools will help give pupils confidence before they enter the world of work, and the opportunity to learn some tips from staff who are among the best in the business.
As well as some valuable cooking skills, an understanding of the world of work and the importance of maintaining the highest of standards are lessons that can stay with someone for life and the earlier they are acquired, the better.
The pupils may or may not wish to pursue a career in the restaurant and hospitality trade, but their time spent in the kitchen and front of house in some of the city's top establishments will be of great use in the future.
The Culinary Excellence programme is one which should be replicated in other fields, to share the wealth of expertise and e xperience that exists in the city with our young people - the next generation who will continue to maintain those standards.
