INNOVATIVE Glasgow chef Nico Simeone has revealed “Catalonia” as the next theme at Six By Nico following a recent trip to Spain.

From May 28 to July 7, guests at the Glasgow, Edinburgh and Belfast branches will journey through Catalan gastronomy with a six-course tasting menu inspired by the unique and independent food culture of the Spanish region.

The chain is known to change its menu theme every six weeks.

Catalonia's new menu includes:

  • bombas - jamon bombas, smoked chilli compote, aioli
  • heirloom tomato - gilda olive puree, toasted grains, goats curd, tomato gazpacho
  • paella - crisp mussels, tiger prawn, saffron & orange emulsion, pickled fennel
  • coley barbecoa - calcot onions, pickled green grapes, ajo blanco, mojo verde
  • pork cheek- morcilla, sobrasada, white bean, spiced aubergine, padron pepper
  • creme catalan- almond arlette, orange creme fraiche and fennel pollen nougatine
