GLASGOW chef Nico Simeone has lifted the curtain on his upcoming menu concept at Six By Nico.
“Thai street food” will offer a unique culinary experience inspired by Southeast Asian food stalls over a six-week period.
The chef recently spent time in his kitchens with Cindy Sirapassorn, owner of Passorn Thai, learning some of her traditional Thai family recipes.

The new six-course tasting menu includes:
- steamed dumplings - tempura tiger prawn, avocado, Thai salad and nam jim jaew
- pork cheek - hot and sour tom yum, barbecue spring onions, lemongrass and galangal
- summer pumpkin spring roll - Thai green sauce, charred sweetcorn, pickled shimeji mushroom
- sea bass - tempura squid, vermicelli noodles, coconut sauce and Thai basil
- Penang chicken - sweet potato, papaya and peanut salad, coriander emulsion
- sticky rice parfait - alphonso mango, sesame cookie, lychee and lime

The concept will run from July 9 until August 18.
